“This is a great recipe for those hanging out for a seriously good oatmeal cookie. Its a bit pricey but the results more than make up for it. Happy Baking”
Ingredients
– 1 and 3/4 cups walnuts
– 2 cups regular oats
– 3/4 cup Kamut, Spelt or other flour
– 1/2 cup Sucanat or brown sugar
– 1 tsp baking soda
– 1 tsp cinnamon
– 1/2 cup maple syrup
– 2 Tbsp almond milk (or soy or rice)
– 3 1/2 Tbsp coconut oil
– 2 tsp vanilla extract
– 2/3 cup extras (raisins, dates, cranberries, coconut, dark chocolate, etc.)
Preheat oven to 180. Place the walnuts on a baking sheet, toast for about 10-12 minutes. Remove and cool. Once cool, process walnuts until finely ground, no more.
Mix together flour, baking soda, one cup of the oats, cinnamon, and sugar. Once mixed, add to food processor with the ground walnuts and process for 20-30 seconds.
Soften coconut oil. Once melted, add maple syrup, almond milk, and vanilla. Pour into food processor and blend until thoroughly combined.
Remove from processor and stir in the last cup of oats. Then fold in whatever you are adding.
A decent size spoonful makes a good size cookie, which you then roll into a ball and flatten with your fingers.
Bake for 10 minutes- NO LONGER!
Take out of the oven and let rest for 2 minutes before transferring to a cooling rack.
