Apple and Peach Crumble

A fun, simple vegan dessert using soy icecream and vegan custard.   New Zealand’s iconic baking brand “Edmonds” make a custard powder which just so happens to be animal free.

Mixing with soymilk, you’ve got a cheap, sweet vegan custard to enjoy with apple peach crumble.  If you want to be extra fancy, add shredded coconut and sultanas!

Ingredients

* 4 Apples

* 1 can of Peaches

 

*1 cup Wholemeal Flour

* 1 cup Rolled Oats

* 1/2 cup Brown Sugar

* 1/2 cup Coconut, shredded

* 1/2 cup Sultanas

 

* 1/4 cup “Olivani” olive oil margarine spread

 

* 1 teaspoon Cinnamon

Utensils

* Mixing bowl

* Spoon

* Knife and chopping board

* Baking dish

For custard

* Pot

* Whisk

Method

Peel apples and slice into regular pieces.  Spread apple slices throughout a baking dish.  Add peaches, pouring peach juice over the stacked fruit.

Mix dry topping ingredients together:

1 cup wholemeal Flour

1 cup rolled Oats

1/2 cup Brown Sugar

1/2 cup Coconut, shredded

1/2 cup Sultanas

1 teaspoon Cinnamon

 

Add 1/4 cup “Olivani” olive oil margarine spread to dry ingredients.  Mix well.

Spread topping over fruit slices.

Bake uncovered in an oven, 180 degrees C for ~30 minutes.  Check regularly, until topping is crisp and apples are soft.

Serve with custard and vanilla soy ice-cream

“Edmonds” Custard Powder, made vegan style :-)

Mix 2 Tablespoons custard powder, 1 Tablespoon of Sugar with 1/2 cup of Soymilk.

Heat slowly, while constantly stirring.  The white powder will soon turn bright yellow, and thicken rapidly.

If it “curdles” and lumps, add a little more soy milk, while stirring.  Lumps can be whisked out into a smooth custard.

 

 

 Method
